Sweet Collaboration: Botanist x Lysée
Fairmont Pacific Rim’s Botanist Restaurant hosted a special dessert experience in collaboration with the acclaimed New York City pastry boutique, Lysée. This exclusive event brought together the talents of Botanist’s Executive Pastry Chef Kate Siegel and Lysée’s James Beard Award-nominated owner and pastry chef, Eunji Lee.
Siegel, a long-time admirer of Lee’s innovative flavours and artistic plating, expressed her excitement about the collaboration. “Her choice of flavours is truly innovative, and her plating and sense of aesthetics are artistic, beautiful, and clean,” said Siegel. “She is one of the technically strongest, most unique Pastry Chefs I’ve seen, and I am beyond excited to have the opportunity to collaborate with her and for Vancouver to taste her desserts.”
Lysée, which opened its doors in June 2022, has quickly garnered a reputation for its exquisite and artfully presented desserts. Inspired by Chef Lee’s love of pastry as edible art, the boutique’s name itself reflects this philosophy, derived from the French word for museum, “Musée.” Lee’s menu draws inspiration from her own background, blending French and Korean influences with the vibrant energy of New York City.
